Beyond its cozy appeal, soup is also one of the easiest ways to pack a variety of nutritious ingredients into a satisfying meal—especially when it includes humble powerhouses like lentils and tomatoes.

Red Lentil Soup

Ingredients

  • 1/4 cup olive oil
  • 2 carrots, chopped
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp curry powder
  • 1/2 tsp dried thyme
  • 1 large can (28 fl oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup red lentils
  • 1 cup spinach, chopped
  • 2 cups water
  • 1 tsp salt
  • 1-2 Tbsp lemon juice

Instructions

1.In a large pot, heat oil over medium heat then sauté carrot and onion until they have softened for about 5 minutes.

2.Add garlic, thyme, curry powder and cumin, and cook until fragrant for about 30 seconds. Pour in diced tomatoes and cook for a few more minutes.

3.Pour in lentils, broth, and water. Add 1 teaspoon salt. Raise heat and bring to a boil, then partially cover pot and reduce heat to simmer. Cook for 25 minutes until lentils are tender.

4.Take off heat and use hand blender to blend soup together.

5.Once done blending, put back on heat and add chopped spinach.

6.Remove from heat and add 1-2 Tablespoons lemon juice to your desired taste.
